The Origin Story of Big Su Beef Noodles

Big Su Beef Noodle

This uncle told me that Big Su Beef Noodle is the first to provide delivery in Bangkok

Big Su Beef Noodle has been serving up the best bowls of braised beef noodles in Bangkok for about 70 years now! Being in business for so long, you know they are doing something special. And special might be a bit of an understatement because they are known for their braised beef, which are freshly braised everyday for 6 hours before serving.

What’s humbling is that, like many of the legendary eateries in Bangkok’s Chinatown, Big Su started off as a little street side hawker stall selling beef noodles, eventually, one particular customer, a well renowned man who goes by the nickname “Big Su” loved these beef noodles so much, that he became a regular at this particular hawker stall.

Big Su‘s Love of this beef noodles was so much that the stall decided to change their name to Big Su. Anyone wanna count how many times I said Big Su?

Fun fact: Big Su Beef Noodles was also one of the first restaurants in Bangkok to offer delivery. Now I don’t know if this is true but that’s what the kind uncle who manned the stall told me. I‘ll just have to take his word for it.

Big Su Beef Noodle’s Menu

Big Su Beef Noodle menu

So many options, it’s almost overwhelming!

Big Su Beef Noodle’s menu is simple. Beef Noodle soup, But the best thing about Big Su is you get complete customizability of your bowl of beef noodles. Firstly you get the choice of noodles, of which there are 3 options to choose from:

  • Vermicelli Noodles (Sen Mee) - Very thin and firm rice noodles

  • Flat Rice Noodles (Sen Yai) - A thicker and wider flat rice noodle with a nice chewy texture

  • Original Rice Noodle (Sen Lek) - Regular rice noodles, a bit chewy

You also get the choice of omitting the noodles entirely, then you’ll be having what is known as a “Gao Laow” which is a bowl of beef soup with just the proteins.

Once you choose your noodles, you have various options for toppings, you can tick which ones you want. There are things like: Braised Beef, Ox Tongue, Beef Intestines, Beef Tripe, heart, Liver, Beef Meatballs, etc…

Big Su Beef Noodle Pricing

Compared to other stalls selling beef noodles in Bangkok, or any noodle restaurant for that matter, Big Su Beef Noodle is quite expensive. The price also depends on how many toppings you selected. You can expect to pay around 170 THB for a bowl, which isn’t cheap. But the portions are larger than your regular bowl of noodles, especially the size of the toppings. Still I would say the pricing is a bit too much.

Big Su’s Braised Beef Noodle Soup

Big Su Beef Noodle soup

Isn’t that the most beautiful bowl of beef noodles you have ever seen?

If you’ve watched my YouTube video, you’ll see that I’ve tried many beef noodles in Bangkok, but none stand out more than Big Su Beef Noodle with its variety.

I ordered my bowl of Big Su Beef Noodles with wide flat rice noodles, braised beef, beef tongue, tripe, and intestine (don’t judge the intestines).

I’ll start off with the soup of which the beef was braised in. The soup broth, no doubt full of rich fattiness from the rendered fat of the beef, tasted delightfully light. Like not greasy or fatty at all. The umami beefy broth is a little bit salty but it’s very soothing to the throat.

The the wide flat noodles are actually my personal one of my favorite type of Thai noodles, second only to the “Bah mee” egg noodles. And the flat rice noodles at Big Su are chewy and very slurp-able, they also do a nice job of holding on to that beef broth.

The Star of the show, the Braised Beef!

Big Su Beef Noodle ox tongue

This piece of braised ox tongue is huge!

Let me start off by describing you my first bite into Big Su Beef Noodles braised ox tongue.

As soon as my teeth has sunk onto that hunk of beef, I could feel every fibre of the tender ox tongue starting to break apart, the rich beefy juices started pouring out.

Don’t knock it till you try it, I know the word “tongue” might send some disgusting images in some of your minds but a nicely cooked beef tongue is the most underrated and delicious part of the cow. And eaten in a braised beef noodle soup? Divine.

The braised beef is literally falling apart!

The same goes for the braised beef. The muscle fibers were literally falling apart, and this one is even better than the ox tongue because it has some fatty bits holding the protein together making for one flavorful bite.

In terms of beef noodles in Bangkok, I think Big Su is one of the best when it comes to your protein options. And it makes sense given that Big Su has been in business for over 70 years at this point.

Big Su Beef Noodle beef intestines

Anyone up for some intestines?

Though I do love me some beef intestines, I got to say that the intestines I had that day at Big Su were a little funky. Funky flavors isn’t uncommon with intestines but this one is just too funky for my taste.

Though it was really tender, like unbelievably so, the most tender beef intestine I’ve ever had, but the flavor just wasn’t it for me.

Not a big fan of the beef intestines in this bowl of beef noodles.

Big Su Beef Noodle tripe

Tripe is seriously an underrated piece of meat(?)

The final piece of braised beef protein, and one of my favorite ingredients in a Chinese style hot pot is the tripe, which is the cow’s stomach lining.

When cooked properly, it’s a very crunchy and slightly chewy piece of meat, though not much happening in terms of flavor, it’s all about the texture with the tripe.

Not to mention the texture allows it to grab onto a lot of that rich beefy broth. The Tripe at Big Su Beef Noodle is superb, not rubbery, crunchy, and it holds a lot of that braised beef juices.

Conclusion

Pros

  • Large portions, the amount of beef you get is very filling

  • You can customize your bowl of beef noodles to exactly how you want it, toppings, noodle, etc…

  • very friendly staff and good service

  • Everything, especially the braised beef was really tasty

Cons

  • The price is a little expensive and it can be more so if you order too many toppings

Overall I Highly Recommend you try out Big Su Beef Noodle. Not only is it one of the best places to get braised beef noodles in Bangkok, but the large portions and the amount of customizability for your bowl of beef noodles is amazing.
